BIOAZUL’s high-frequency ultrasonic humidifiers are systems that allow one to exercise appropriate control over relative air humidity with low energy consumption.

Humidifiers produce tiny droplets of water measuring between 1 and 3 microns through very high-frequency vibrations (1.7MHz), generating a mist which provides the desired humidity conditions in the area where they are applied.

A good ventilation system in the area one wishes to humidify will in turn ensure there is uniform relative humidity for fresh or frozen products.

The energy consumption of BIOAZUL’s humidifiers is very low (up to 30% less than conventional systems) and they require very little maintenance. Another added advantage is that they produce practically no noise. Furthermore, they allow for a reduction in the energy consumption of the refrigeration chamber compressors, thanks to the adiabatic cooling effect produced by the mist.

The use of ultrasonic humidifiers makes it possible to save on labour costs. Their use in refrigeration chambers ensures that it is not necessary to wrap products in order to prevent the loss of water, and their application in shops allows fresh produce to be kept in displays for 24 hours (without storing it in a chamber), thus leading to lower losses in merchandise due to falls and/or handling, along with a reduction in associated working hours.

UltraFRESH

Fruit and vegetables kept in refrigeration chambers and refrigerated displays tend to lose weight and freshness due to water loss, factors that decrease these products’ value and quality. The UltraFRESH system provides optimal relative humidity conditions to avoid deterioration in the fresh produce, thus retaining freshness and value over longer periods.

The UltraFRESH system produces a mist made up of tiny droplets which evaporate on contact with the outside air, forming a layer of fresh damp air around the products. This effect is known as adiabatic cooling. The temperature will fall by approximately 4°C and relative humidity can be increased to 95 %. Thus, fresh produce does not lose its moisture and, at the same time, it is cooled without getting damp.

APPLICATIONS

  • Supermarkets. Relative humidity at supermarkets is extremely low in both winter, when the heating is on, and in summer, when the air conditioning in running. This leads to fresh produce kept in displays rapidly losing quality due to the loss of water caused by this dry environment. The BIOAZUL ultrasonic humidification system provides you with an ideal solution to keep your produce fresh over a longer period.
    The UltraFRESH system can be used to conserve not only fruit and vegetables, but also any other fresh product or product to be cut to order (meat, cold cuts and fish displays), as well as IV Range products in micro-perforated packaging.
  • Refrigeration chambers. Using the UltraFRESH system in refrigeration chambers greatly reduces the negative effects of using evaporators, such as discolouration, structural changes (flabbier products, loss of rigidity, etc.) or substantial losses of weight. Suitable systems are configured according to the chamber’s capacity requirements.
  • Other applications: wineries, cheese factories, etc.

UltraBAK

Humidity is one of the constraining factors in the bakery sector which directly affects the quality of the dough and therefore the bread. UltraBAK offers the chance of rapidly reaching the relative humidity desired and maintaining said level in a stable and uniform way in the fermentation/refrigeration chamber.

Ultrasonic humidification ensures high levels of relative humidity of up to 95% in the chamber, even at cool temperatures and without the risk of condensation.

UltraBAK improves fermentation by minimising fissures in the bread’s crust and produces end products with a larger volume and a better colour. UltraBAK provides a better balance between water activity in the dough and humidity in the chamber, giving rise to better quality products.

APPLICATIONS

  • Direct fermentation. Improves the quality of bakery and pastry products by ensuring a uniform distribution of humidity throughout the chamber, which allows a well-developed crumb, a good grigne and a crispy crust to be attained. Allows a relative humidity of up to 90% to be reached with fermentation temperatures of 35°C. At lower temperatures, a relative humidity of up to 100% can be reached.
  • Delayed fermentation. Allows products to be stored at a temperature of around +4°C under optimal humidity conditions without any condensation risk at all. The risk of the product drying out during proving is avoided by being able to apply humidity at these temperatures, thus improving its expansion in the oven.
  • Cooling of products. Can be applied to all kinds of bread that has to be cut, packaged or frozen, reducing cooling times and minimising the loss of mass, and thus increasing its freshness.
